Our mustard flour is available in full-fat and de-heated variants, featuring fat content starting at 25% and allyl isothiocyanate (AITC) levels of up to 0.75%, providing flavour profiles from mild to intensely hot. It is widely used in sauces, mayonnaises, salad dressings, and meat processing, and functions naturally as an emulsifier, thickener, and preservative. Its functional properties also make it suitable for healthcare formulations, including liniments and selected cosmetic applications.
